Cutting the Rolled-out Udon Dough
You powder the rolled-out Udon dough with corn starch again. Before cutting, you must change the steering wheel of the pasta machine from a roller to a cutter. Then, you cut the powdered Udon dough through the pasta machine. When you steer the wheel, slow rotation is recommended for sure cutting. If the amount of water was too much in making "Udon ball", two Udon noodles would be stuck to one Udon noodle. However, that is not a big problem because the stuck Udon will be seperated when cooked in boiled water. You powder the cut Udon.
